Heat the grill to high. Brush the mushrooms with olive oil, season, and grill until tender. Cook the garlic and spring onions in olive oil until soft, then stir in the spinach until wilted. Fill the mushrooms with spinach mix, top with goat’s cheese and grill until golden. Serve on top of toasted ciabatta.
