Field mushrooms, spinach and goat’s cheese on toast

Large flat mushrooms are topped with spinach and goat's cheese. Select deep mushrooms if you can so you can cram in more delicious filling, serve on top of toasted ciabatta.

  • Field mushrooms
    4 pcs.
  • Olive oil
    2 tsp.
  • Garlic, sliced
    2 cloves
  • Spring onions, sliced
    2 slices
  • Spinach, washed
    cups
  • Goat’s cheese, sliced
    cups
  • Ciabatta, toasted
    4 slices

Method

  • Heat the grill to high. Brush the mushrooms with olive oil, season, and grill until tender. Cook the garlic and spring onions in olive oil until soft, then stir in the spinach until wilted. Fill the mushrooms with spinach mix, top with goat’s cheese and grill until golden. Serve on top of toasted ciabatta.
