Method

  • Preheat a saucepan to high heat and add the sugar and water. When it boils, add the walnuts and boil for 2 minutes. Drain the walnuts and use a paper towel to dry them.

  • The egg whites should be placed in a deep bowl. Use a fork or a whisk to whip the egg whites until they become foamy. Next, stir in the rice flour and mix until you reach a paste consistency. 

  • Wash, peel, and devein the shrimps. Use a paper towel to dry them.

  • Heat up a skillet to medium heat. Grease it with vegetable oil. Dip the shrimps in the rice flour and egg whites paste, then fry them in the skillet. Fry until they change their color, and remove them using a slotted spoon. Use a paper towel to dry the excess oil.

  • Mix the mayonnaise, honey, and sweetened condensed milk in a bowl. Add the fried shrimps and toss until evenly combined. Pour on top the walnuts and the dish is ready to be served! As a garniture, cook rice. Decorate with some herbs.

Tips

  • Feel free to add spices like paprika, salt, or oregano to the sauce. It will add more flavor to the dish. But make sure you don't exaggerate.

  • Add a pinch of salt, or a drop of lemon juice to the egg whites if they don't foam. This will help turn the eggs foamy faster.
