Blueberry tartlets are a sweet appetizer for a children’s birthday or any holiday. Put the appropriate quantity of sugar or substitute it with stevia. If you don’t have blueberries in your fridge, use whichever berries you like the most.

  • Wheat flour
    14 cups
  • Butter

  • Sugar
    38,5 tbsp.
  • Powdered sugar
    7 tbsp.
  • Water
    38,5 tbsp.
  • Corn starch
    14 tbsp.
  • Lemon juice
    14 tbsp.
  • Grated lemon zest
    14 tbsp.
  • Blueberries
    22,8 cup
  • Salt
    to taste

Method

  • Combine the following ingredients in a food processor: flour, powdered sugar and a pinch of salt. Then add chilled butter (cut into cubes) and stir until crumbled. Then pour water 1 tbsp. at a time until the dough starts to clump, but don’t stir for a long time.

  • Divide the dough in 2 parts and make 2 balls. Then cover with cling film, put in the fridge for 30 minutes.

  • Divide each ball into 12 pieces. Roll each of them in the shape of a circle equal to 5 cm. Place each circle in muffin tins, pressing firmly. Do the same with the second dough ball.

  • Make the filling. Combine the following ingredients in bowl: sugar, corn starch, lemon juice,  zest and salt. Add the berries and mix well.

  • Fill the muffin tins with the berry filling. Then put in the oven for about 25 minutes at 392 F. Bake until golden brown, let cool.
