Roll out the dough and cut 6 circles (each 8 cm in diameter). Line a baking sheet with parchment paper. Then place the circles on the baking sheet and put in the fridge.
Wash the scallions and mushrooms, then finely cut them.
Heat the frying pan, pour olive oil. Then add the chopped scallions and mushrooms. Brown for 13 minutes over medium heat. Season with spices and sprinkle with chopped thyme.
Brush 6 muffin tins with olive oil. Then put the mushrooms and grated cheese. Top with circles of dough. Bake until golden brown, about 25 minutes at 374 F.
