Cut the chicken wings in half at the joints. Use a sharp knife. Be sure that you’re working on a flat surface.
Make marinade. Mix all the ingredients in a bowl (except the lime wedges). Then pour the sauce over the chicken wings. Mix well in a bowl, to cover the entire surface of the chicken.
Cut the lime into wedges for serving.
Cover the baking pan with foil, place 2 racks (in the middle, up). Take a vegetable oil, spray the racks. Preheat oven, set temperature 250 F.
Transfer the wings in one layer in the middle rack, bake for half an hour. Then transfer them to the upper rack, set the temperature to 425 F. Cook for about 50 minutes. Next, open the oven and let it cool for 5 minutes.
Serve the baked curry wings with lime wedges and squeeze the juice on top.
How to get lime juice. Take out the lemon from the fridge, leave it heat up for a few minutes. Then roll the fruit on your cooking board with your hands. This action helps to get more juice. Then slice the lemon crosswise using a sharp knife. Squeeze the lemon with the cutting side up, so the seeds don’t fall into the bowl.
How to choose chicken wings? Buy not very large chicken wings, they are safe to eat. The fresh chicken wings doesn’t have smell, they have even color, without any damage. They mustn’t be sticky!
Don’t substitute baking powder with soda, you can spoil the taste.
