Firstly, preheat your oven to 350°F. Mix the garlic, softened butter and salt in a bowl until smooth. Add the finely cut fresh parsley.
Cut the bread into 0.80 Inch rhombs but don't cut all the way through. Pour a little butter mixture into each crack of the loaf and put some grated Mozzarella. Brush the loaf surface with the remaining butter.
Cover the loaf with the foil sheet and bake for 20 minutes in the preheated oven, then remove the sheet and bake for another 10 minutes.
Fresh vegetable salad goes well with this dish.
