Dice tomatoes, red onion and jalapeno. Cut the cilantro into large pieces and put all ingredients in a bowl. Add the indicated amount of lime juice. Add salt and pepper to taste. This is the future burrito dressing.
Heat up the pan. Add vegetable oil. After a minute, add the chorizo and cook for about 5 minutes until lightly crispy. Stir so it doesn't burn. Transfer to a separate plate. Add the potatoes to the pan and cook until golden brown, about 10-12 minutes.
In a separate bowl, beat eggs until foamy. Salt, pepper and add hot sauce (just a couple of drops). Add eggs to potatoes and cook for about 3 minutes. Remove from skillet and keep warm.
Wipe out the pan and put it back on the stove. Heat each tortilla but be careful not to burn it.
Assemble the burrito: layer the sliced avocado, fried potatoes and about 2 tsp of burrito dressing on the tortilla and sprinkle with cheese. Fold the tortilla on both sides and roll. Sprinkle with cilantro and serve with remained dressing and hot sauce.
