Method

  • Dice tomatoes, red onion and jalapeno. Cut the cilantro into large pieces and put all ingredients in a bowl. Add the indicated amount of lime juice. Add salt and pepper to taste. This is the future burrito dressing.

  • Heat up the pan. Add vegetable oil. After a minute, add the chorizo and cook for about 5 minutes until lightly crispy. Stir so it doesn't burn. Transfer to a separate plate. Add the potatoes to the pan and cook until golden brown, about 10-12 minutes.

  • In a separate bowl, beat eggs until foamy. Salt, pepper and add hot sauce (just a couple of drops). Add eggs to potatoes and cook for about 3 minutes. Remove from skillet and keep warm.

  • Wipe out the pan and put it back on the stove. Heat each tortilla but be careful not to burn it.

  • Assemble the burrito: layer the sliced avocado, fried potatoes and about 2 tsp of burrito dressing on the tortilla and sprinkle with cheese. Fold the tortilla on both sides and roll. Sprinkle with cilantro and serve with remained dressing and hot sauce.

Tips

  • Before laying out the fried sausage, put paper towels on a plate, they will absorb excess fat.
