Method

  • Boil the rice in salted water.

  • After you peel the shrimp, fry it in your pan with olive oil. Then season with pepper and salt, add chopped tomatoes and red pepper.

  • Meanwhile, peel the avocado and mix with 2 tablespoons of sour cream, lemon juice and garlic. You can add chili if you like.

  • Lay out the tortillas, fill them with corn, guacamole, beans, fried shrimp and rice.

  • Grate and add cheese.

  • Roll up and fry the burrito on a grill pan for about 3 minutes.

  • Serve with guacamole.

Tips

  • Arugula goes well with this dish.
