Boil the rice in salted water.
After you peel the shrimp, fry it in your pan with olive oil. Then season with pepper and salt, add chopped tomatoes and red pepper.
Meanwhile, peel the avocado and mix with 2 tablespoons of sour cream, lemon juice and garlic. You can add chili if you like.
Lay out the tortillas, fill them with corn, guacamole, beans, fried shrimp and rice.
Grate and add cheese.
Roll up and fry the burrito on a grill pan for about 3 minutes.
Serve with guacamole.
