Method

  • Heat oil in your pan. Cut the potato into thin slices. Roast it for 7 minutes. Add padron pepper (whole) and fry for 6 minutes, add seasoning. Then lower the heat.

  • Whip the eggs and add spices. Pour the mixture over the potatoes, then cover with lid and cook for 17 minutes over medium heat. Put on a plate and serve.
