Heat oil in your pan. Cut the potato into thin slices. Roast it for 7 minutes. Add padron pepper (whole) and fry for 6 minutes, add seasoning. Then lower the heat.
Whip the eggs and add spices. Pour the mixture over the potatoes, then cover with lid and cook for 17 minutes over medium heat. Put on a plate and serve.
This dish goes well with fresh vegetables or a salad.
