Method

  • Firstly, prepare the batter. Mix eggs with milk and melted butter in one bowl. Beat the ingredients well with a mixer. Add flour and mix with a spatula until smooth. Set the batter aside for about 25 minutes. 

  • In the meantime, prepare the filling. Melt 1 tsp of butter in a frying pan. Chop the onion finely. Put the onion in a frying pan and fry it until golden brown. Put the onion to a separate bowl. 

  • Preheat a non-stick frying pan and add the melted butter. Pour the batter into the pan with a ladle. Fry it over medium heat. The crepe should be thin and and must cover the entire bottom of the pan. When bubbles appear on the liquid dough, turn the pancake over and fry on the other side for about one minute, a golden brown crust should appear. Transfer the crepes to a plate.

  • Pour mustard into each crepe, put a slice of ham, chopped fried onion and sprinkle with cheese. Wrap the crepe and fry in a frying pan on both sides for 2 minutes over low heat. The shredded cheese inside should melt. Serve crepes with ham and cheese hot! 

Tips

  • You can reheat the ham and cheese crepes in the oven or microwave.

  • Dry ingredients for the batter should be poured partly, after each time mix the batter with a spatula. There should be no lumps in the batter. Before frying the crepes, tap the bowl with the batter on the table to let the air comes out.

  • To melt the butter, put it in a bowl. Put the bowl in the microwave for 20 seconds. Check if the butter has melted, if not, then put the butter in the microwave for another 10-20 seconds.
