The next step is to make the filling for the crepes. Tale a small bowl to mix Greek yogurt and lemon juice in it. Salt the yogurt and add ground black pepper to taste.
Now you need to melt the butter for frying process. Put a non-stick frying pan on the heat and put a piece of butter there. Pour the batter with a ladle into the hot frying pan, spread the batter all over the bottom. When the bottom of the crepe becomes golden brown, turn the crepe over and fry for one minute. Place hot crepes to a plate on the top of each other, greasing each crepe with butter.
Brush each crepe with yogurt and put small pieces of smoked salmon. Wrap the crepe into a triangle. Now you can serve it, you can decorate it with arugula and cherry tomatoes if you want. Enjoy!
