Delicious openwork crepes made of milk and water that are cooked very fast. A hearty dish for breakfast, lunch or dinner. Serve with any filling: fruits, honey, cottage cheese, chocolate paste, mushrooms and others.

  • Milk
    12 tbsp.
  • Eggs
    2 pcs.
  • Vegetable oil
    4 tsp.
  • Water
    10 tbsp.
  • Salt

Method

  • Break eggs into a bowl. Add the salt. Stir well with a fork, mixer or whisk. Then pour in boiling water (boil cold water in the kettle in advance) and milk.

  • Sift the flour (obligatory). Then pour in the egg mixture in a thin stream. Stir well to make the batter without lumps. Let it stand for about 10-15 minutes. Finally, add vegetable oil and stir again.

  • Grease the frying pan with vegetable oil. Heat the frying pan over high heat. Pour in the batter with a ladle in the middle, then quickly spread over the surface (take the handle of the pan and tilt to the sides to get the circle). Cook for about 2 minutes on one side, then flip with a spatula on the other side.

Tips

  • How to grease a frying pan? To do this, take a bread crust, dip it in oil and grease the frying pan.

  • Use a light pan, with non-stick coating. Do not use aluminum type. 

  • If the batter is too runny, add flour in one part of the batter. Then combine with the rest and let it stand. Do the same if the pancakes are tearing.

  • Grease each ready-made pancake with a piece of butter, so that they do not stick together.
