In a heated pan with oil fry the onion, ginger, chili and other spices, when the onion softens a little add the mushrooms and fry for 3 minutes.
Add the eggs to the mushrooms, stir and let cook for 4-5 minutes. When the omelet is ready, you can sprinkle the rest of the onion and coriander. Serve with kejap manis and sriracha sauce.
