  • Sesame oil
    to taste
  • Groundnut oil
    to taste
  • Red chilli, seeded and finely chopped
    1 pcs.
  • Ginger, peeled and cut into matchsticks
    to taste
  • Spring onions, whites and greens separated
    3 psc.
  • Shiitake mushrooms, sliced
  • Eggs
    3 pcs.
  • Sesame seeds
    2 tsp.
  • Coriander
    a small bunch
  • Kejap manis or sriracha sauce
    to serve

  • In a heated pan with oil fry the onion, ginger, chili and other spices, when the onion softens a little add the mushrooms and fry for 3 minutes.

  • Add the eggs to the mushrooms, stir and let cook for 4-5 minutes. When the omelet is ready, you can sprinkle the rest of the onion and coriander. Serve with kejap manis and sriracha sauce.
