Cut the ham into small pieces. Heat the frying pan, add oil (¾ tbsp.). Brown the ham for a few minutes, then remove to a plate.
Break the eggs, beat with a fork or use mixer. Next, add the ham.
Heat again the frying pan. Pour in the rest of corn oil. When the oil is warmed up, pour in the egg mixture. Brown until it’s done. Serve immediately.
If serrano ham is very salty, soak in milk for 10 minutes. Then dry with a paper towel.
