Cut the sausages into small cubes or slices. Preheat a non-stick frying pan and put the sliced sausages to fry. Let them to be covered with a golden crust, it will take no more than 5 minutes. Put the sausages to a plate.
Reheat the oil in a frying pan. Finely chop the onion and bell pepper. Put the mushrooms, chopped onion and chopped bell pepper in the pan. Add a little amount of salt. Vegetables should become soft after 5 minutes of frying.
Finely chop the scallions. Break the eggs into a deep bowl. Salt the eggs and add ground black pepper, favourite spices. Beat it with a whisk. Add milk, shredded cheese, chopped spinach, fried sausages, vegetables and chopped scallions to the eggs. Mix the ingredients with a spatula.
Preheat the oven to 375F. Fill the muffin molds half with the mixture of the eggs. Put them in a preheated oven. Bake the omelette muffins for no more than 25 minutes. Check the readiness of the dish from time to time. Remove from the oven and serve!
Omelette muffins can be stored for up to 3 days if you put them in the fridge. Use food containers. It's preferably to eat them in the first 2 days.
Muffins can be eaten both hot and cold. To make the cheese stretch inside, preheat the muffin in the microwave.
