This is not a recipe of sweet muffins! These are Оmelette muffins with sausages and cheese. This dish is considered healthy. It can be eaten both as a main dish and as a snack. Even a beginner can cook these muffin omelettes! The recipe is quite simple. Let's get started!

  • Turkey sausage
    6 inch
  • Olive oil
    1,5 tbsp.
  • Mushroom pieces
    6 oz
  • Red onion
    2 pcs
  • Bell pepper
    2 pcs
  • Eggs
    9 pcs
  • Shredded cheese
    1 cup
  • Chopped spinach
    1 cup
  • Milk
    1,5 cup
  • Scallions
    1 cup
  • Salt, pepper
    to taste

Method

  • Cut the sausages into small cubes or slices. Preheat a non-stick frying pan and put the sliced sausages to fry. Let them to be covered with a golden crust, it will take no more than 5 minutes. Put the sausages to a plate.

  • Reheat the oil in a frying pan. Finely chop the onion and bell pepper. Put the mushrooms, chopped onion and chopped bell pepper in the pan. Add a little amount of salt. Vegetables should become soft after 5 minutes of frying.

  • Finely chop the scallions. Break the eggs into a deep bowl. Salt the eggs and add ground black pepper, favourite spices. Beat it with a whisk. Add milk, shredded cheese, chopped spinach, fried sausages, vegetables and chopped scallions to the eggs. Mix the ingredients with a spatula.

  • Preheat the oven to 375F. Fill the muffin molds half with the mixture of the eggs. Put them in a preheated oven. Bake the omelette muffins for no more than 25 minutes. Check the readiness of the dish from time to time. Remove from the oven and serve!

Tips

  • Omelette muffins can be stored for up to 3 days if you put them in the fridge. Use food containers. It's preferably to eat them in the first 2 days.

  • Muffins can be eaten both hot and cold. To make the cheese stretch inside, preheat the muffin in the microwave.
