Break the eggs in a bowl. Beat with a fork or use a mixer.
Grate Gruyere cheese.
Heat the frying pan, pour in olive oil. When the oil is warmed up, add butter.
Then pour in the egg mixture to the pan, stirring constantly with a whisk in a circular motion. Stop stirring when the egg mixture begins to thicken. Sprinkle with grated cheese, season with spices. Fold in half, using a spatula and serve.
