Firstly, peel the potatoes with a knife or vegetable peeler and wash them from dirt. Cut the potatoes into slices. Dip the sliced potatoes in cold water for a few minutes, the starch comes out of the potatoes. It will help the potatoes to fry well. Preheat the frying pan, pour vegetable oil and put the potatoes there. Fry it until golden brown on each side. It may take 10-15 minutes. Then place the fried potatoes to a bowl and let it cool down.
Put a pot with water on the fire, water should start to boil. During this time, peel the skin off of the chouriço. Put the meat and the chouriço in boiling water, add a pinch of salt. Cook ingredients for 35 minutes. When the meat is ready, remove it from the water and let it cool. Then cut it into small pieces.
Take another bowl and crack the eggs. Add a pinch of salt. Beat the eggs until bubbles appear. Then put the chouriço, meat, and the fried potatoes in the egg mixture. Add ground pepper and chopped parsley. Mix the ingredients, set aside.
Chop the onion finely. Pour olive oil into a frying pan and turn on medium heat. Put the finely chopped onion in a frying pan. The onion should get a golden colour and become soft. Then pour in the mixture of eggs and potatoes. Fry the omelette for 5 minutes on each side. The omelette should rise and become fluffy. Check the readiness with a spatula.
Turn off the heat and serve the Spanish omelette to the table. Enjoy your meal!
Sprinkle the dish with parsley. If you want to feel the piquancy, then season the omelette with chili pepper, dry or fresh.
Cook the omelette in a pan, covered wit the lid. This way it will rise very well.
