A Spanish recipe easy to prepare with few ingredients. It has a fine consistency, perfect for potato lovers. It does not require baking, so it cooks quickly. The ingredients used categorize it as a healthy recipe.

  • Potatoes

  • Eggs
    6 pcs.
  • Onion
    1,5 pcs.
  • Cooking oil
    6 tbsp.
  • Cold water
    0,9 cups
  • Black pepper and salt

Method

  • Peel the potatoes and onions. Wash the vegetables well. Slice the potoatoes and repeat the same with the onion.

  • On high heat, add the vegetables and water in a saucepan to cook for 10 minutes. Mix from time to time. Leave the lid on for another 10 minutes and it should be ready. Drain the vegetables from the liquid left over from frying through a sieve.

  • In a bowl, add the eggs, salt and pepper and mix with a fork until homogenized.

  • Add the vegetables with the egg mixture and combine them together in a large bowl. You can also add chicken if you like. In a pan heated with oil, fry the mixture over medium heat for 6 minutes on one side, then turn to the other side and fry for another 6 minutes.

Notes

  • Serve it for lunch with your favorite green salad. It also goes very well with pork as a side dish.

  • To get a perfect rounded shape at the end, fry the mixture in a round pan and cover it tightly with a plate instead of a lid.

  • It is important to fry for 6 minutes on each side so that it is not raw at the end or too burnt.
