  • Mix oat flour, egg yolk, salt, cold butter and water. Mix by hand until the dough is formed. Cover with plastic wrap and put it in the fridge for 30 minutes.

  • Take out the dough from the fridge, press the flour on the kitchen table and spread the dough with a rolling pin. Cover the springform tin with a diameter of 7.8 inches with it. Send in the oven to bake at 365° F for 15 minutes.

  • Wash the broccoli florets and chop them finely. Put them in boiling water for 2 minutes, then in cold water for 5 minutes.

  • For the sauce, mix the cream, grated cheese, finely chopped celery root, eggs, salt and pepper.

  • For the filling, cut the salmon into cubes and put it at the base of the dough. Add broccoli and liquid mixture. Bake everything for 35 minutes at 365° F.

  • Serve it hot, for dinner with a glass of white wine.

  • It is important to add the correct amount of ingredients so that both the dough has the necessary texture and the filling is dense enough.

  • You can replace the salmon with tuna if you prefer it more.

Bon Appetit!
