Form the dough by mixing the flour, butter, salt and cold water together. Mix by hand, form a ball, cover with food wrap and refrigerate for 30 minutes.
For the filling, mix the eggs, cream, salt and pepper. Add the tuna and incorporate it into the mixture.
Take out the dough, spread it with the help of a rolling pin and cover the ceramic pan with it. Pour the liquid tuna mixture over the dough, add the sliced tomatoes and aromatic herbs on top.
Bake everything in the oven for 35 minutes at 365° F. Carefully remove the quiche from the oven and serve it with sour cream.
Goes well with white or rose wine for dinner.
Use any kind of spices (paprika, basil, seafood spices go very well).
