  • Rinse avocado under running water, peel. Then mash avocado with fork or puree in a blender.

  • Make a poached egg. Fill a pot/saucepan with water over low heat, break eggs into a separate bowl. When the water starts boiling, add vinegar. Then make a funnel with a fork or whisk and immediately pour in the egg. Cook not more than 3.5 minutes. Then take out the eggs with a slotted spoon. Transfer in a paper towel.

  • Brown bread in a toaster or in a frying pan. Then transfer the toasts to the plate. Spread them with avocado mixture, put the poached eggs on top. Season to your taste, garnish with herbs.
