There are a lot of stories about origin of club sandwiches, but none of them is proved. The most truthful theory goes back to the 19th century where there was one gambling house in New York. As we know the second name of this recipe is clubhouse sandwich. The recipe is made of turkey, grilled toasts, poured with bitter and spicy sauce. Serve for lunch or breakfast!

Method

  • Preheat your grill grate. Then put the bacon on a wire rack and brown it for 3-4 minutes until it’s crispy. Flip 1 time. Put on a kitchen paper towel and dry it.

  • Make the sauce. Take a bowl and pour the yolks. Then add vinegar, mustard, chopped garlic and any spices to your taste. Mix everything. Next, pour olive oil slowly and don't stop stirring. In a minute, you will notice that the mixture begins to thicken.

  • Cook the turkey meat. Fill a pot with water, then add the meat and ½ tbsp. of salt. Cook for about 30 minutes until tender.

  • Grill the bread, pour the sauce over. Divide the lettuce into 2 parts for 1 serving. Then put the chopped tomatoes and some of the finely chopped chives. Season to taste.

  • After put the slices of turkey, cover with slices of bread. Put the lettuce, then crispy bacon and sprinkle with chives. Cover with remaining slices of bread and press gently. 

  • At the end cut each sandwich into four triangles and poke it with a toothpick to keep it from falling apart. Put on serving bowls and sprinkle with parsley.

Tips

  • If you don’t have grill, use a grill pan.
