If you don't have time for a nutritious meal in the morning and you're starving after an hour at work, then egg and ham toast in your lunchbox is the best solution. This is a popular German breakfast recipe, which is also called "Ei guckt durch Loch". It's also an incredibly quick recipe, perfect for those who enjoy lying in bed until the last minute.

  • Sliced ham
    2 slices
  • Salt and spices

Method

  • Cut a hole inside the toast or other kinds of bread. Brush the bread on both sides with butter. Lightly toast the bread on both sides in a heated frying pan.

  • In the hole, add finely chopped ham and carefully crack the egg. Turn down the heat, cover with a lid, and let the egg white set. After a couple of minutes, flip the slices of bread with a spatula and keep them under the lid again!

  • Rinse well and slice, or dice the tomatoes. After that, put them on top. Garnish with pea sprouts and season with salt and spices.

Notes

  • Use a glass to cut holes in the toast. If you're a fan of creativity, then you can also use cookie tins to give the hole in the toast the shape you want.

  • Experiment with the filling to your preferences. You can also add chopped mushrooms to it or make a creamy mushroom sauce separately and pour it over your toast. That way the dish will be incredibly tender and creamy.

  • Toast can also be pre-fried in a toaster. If you don't have one, use a frying pan as directed in the recipe.
