Method

  • Peel avocados. Mash with a fork in a bowl until smooth.

  • Fill a pot with water, add drops of vinegar. Bring to a boil. Gently break egg in a bowl. Make a whirlpool using a fork. It helps the whites wrap around the yolk. Then slide the egg into the center of the pot. Cook for about 3-4 minutes (when the white is set). Take a slotted spoon and lift the egg out of water. Dry with a paper towel. Repeat actions with the other eggs.

  • Put the slices of bread in the toaster. Then spread the crushed avocado over bread and place the poached egg on top. Season to your taste.

Tips

  • Buy farm-fresh, antibiotic free and natural eggs. Use only fresh ones, to get a fluffy and tasty dishes. Pay attention to the expiration dates.
