Method

  • Peel avocados, then cut into slices.

  • Toast bread in the toaster.

  • Break eggs into a bowl, whisk it. Then pour in milk and whisk well. You can use a fork. Heat the frying pan, spray with vegetable oil and pour in egg mixture. Stir it until set.

  • Place the sliced avocado over the toast. Sprinkle with chopped scallions. Season to your taste.
