Squash toast with feta, sumac and poached egg

Start your morning with crispy and nutritious toast with egg, feta and cherry tomatoes. It's quick, healthy and vegetarian.


  • Butternut squash, peeled and cut into 1cm cubes
  • Pomegranate molasses
    1 tsp.
  • Sumac
    a few pinches
  • White wine vinegar
    1 tsp.
  • Egg
    1 pcs.
  • Bloomer or rye bread, toasted
    1 slice
  • Feta, crumbled
    0,1 cup
  • Cherry tomatoes, quartered
    4 pcs.

  • Mix butternut with 4 tbsp water, molasses and seasonings. Cover and place in the microwave for 5-10 minutes. Drain off excess water, then add a pinch of sumac and mash everything with a fork.

  • Pour water into a pot and bring it to a boil, add the vinegar, use a spatula or spoon to make a funnel of water and beat the egg into it. Cook it for 2-3 minutes.

  • Combine all the ingredients on toast, put an egg on top, and you are ready to serve. Enjoy your meal.
