Mix butternut with 4 tbsp water, molasses and seasonings. Cover and place in the microwave for 5-10 minutes. Drain off excess water, then add a pinch of sumac and mash everything with a fork.
Pour water into a pot and bring it to a boil, add the vinegar, use a spatula or spoon to make a funnel of water and beat the egg into it. Cook it for 2-3 minutes.
Combine all the ingredients on toast, put an egg on top, and you are ready to serve. Enjoy your meal.
