Wonderful and crunchy toast for brunch. Easy to make. The sweet corn makes the dish even more unique. Try it for breakfast!

  • White bread slices

  • Corn on the cob kernels, fresh or tinned
    cup
  • Whole milk
    4 fl. oz
  • Eggs
    2 pcs.
  • Maple syrup, plus extra to serve
    1 tbsp.
  • Brown butter
    1 tbsp.
  • Vegetable oil
    for frying
  • Butter
    for frying
  • To serve:
  • Icing sugar
    tbsp.
  • Ground cinnamon
    tsp.
  • Blueberries

Method

  • Preheat the oven. Place the toast on the rack in the oven and bake for 20 minutes at 260 F

  • Blend the milk and sweet corn in a blender. Add the egg, brown butter, maple syrup and a pinch of salt. Continue to whisk.

  • Place the toast in the sauce and leave for five minutes. The toast should soak well in the sauce.

  • Heat a frying pan. Put butter and olive oil in it. Fry each toast for 2-3 minutes. The toast should turn golden.

  • To serve the dessert, sprinkle the toast with cinnamon and powdered sugar. Garnish the toast with the blueberries.
