Cover the baking dish with baking paper and grease it with butter. Preheat the oven to 390 F.
Wrap the sweet potatoes in foil, put them on a baking sheet and roast for 35-45 minutes. When the potatoes are ready and cooled, remove the flesh from it and put it in a separate bowl.
Melt the butter and chocolate in a pan over low heat, stirring regularly.
Add sugar to sweet potatoes, whisk until smooth, and mix with melted chocolate and butter. Then add the beaten egg, vanilla extract, sift flour, cocoa powder and ground ginger and mix well. Add in the chocolate chips and pour a mixture into a tin.
Bake for 20-25 minutes, until just set and still a little soft in the middle. Cool, then remove and cut into squares.
