Easy recipe of baked cheesecake made of shortbread cookies, eggs, cream cheese, sour cream and lemon. It has a little sour taste. Serve with hot drinks, garnish with mint leaves and sprinkle with powdered sugar.

  • Remove the foods from the refrigerator, let it warm up at room temperature for 20 minutes. At the same time grind the cookies into crumbs. Combine the crumbs with melted butter. Spread this mixture evenly into a baking dish. Press well with a cup or glass. Then refrigerate.

  • Filling. Break the eggs in a bowl, beat well in a mixer. Then add sugar, cheese, sour cream and lemon juice. Mix well. Grate the lemon zest and add to the egg mixture. Pour this filling over the pressed crumbs. Bake in the oven for 60 minutes at 320 F. Finally chill down the cheesecake before serving.


  • How to get lemon juice? Remove a lemon from the refigerator, let it warm up for 10 minutes. Then roll the fruit on your cooking board with your hands. This action helps to get more juice. Then slice the lemon crosswise using a sharp knife. Squeeze it with the cutting side up, so the seeds don’t fall into the bowl.

    How to grind the cookies? Put the cookies in a packet, crush with a rolling pin.
