Method

  • For the top dough, add flour, baking powder and 0.4 ounces of sugar to the bowl of a mixer. Grate the zest from a lemon and mix well with a spoon.

  • Cut the butter into cubes and unite them well until all is incorporated. Pour in the whipped cream and keep mixing until the dough comes together.

  • Sprinkle some flour on a kitchen counter. Add the dough, gather it into a ball, flatten it, cover it with food foil and put it in the fridge for 30 minutes.

  • Take out the dough, spread it with a rolling pin on the surface sprinkled with flour in a rectangle of approximately 7.8 inches. Cut the dough into four.

  • Press the flour on the table and on the rolling pin. Roll out the dough in a large circle. Using a round cutter, cut small circles from the dough.

  • For the cherry mixture, mix the fruits in a bowl, 1.76 ounces sugar, lemon juice, starch, cinnamon and the vanilla extract.

  • Put the final mix in a ceramic bowl, cover with the dough discs. Sprinkle melted butter and sugar on top. Bake for 45 minutes at 356° F.

Recommendation

  • Use any kind of fruit you like. Fresh ones are the best for a more intense taste.

  • Serve with your favorite ice cream or with fresh berries.
