No time to bake? No problem! This simple and delicious recipe for light, no-bake oatmeal cookies that can be made in just 30 minutes. These deliciously sweet and nutty cookies are filled with coconut, peanut butter, chocolate and heart-healthy oatmeal.   • Unsalted butter
    168 tsp.
  • Granulated sugar
    21 tsp.
  • Milk
    21 tsp.
  • Unsweetened cocoa powder
    10,5 tsp.
  • Peanut butter
    28 tsp.
  • Pure vanilla extract
    42 tsp.
  • Oats
    126 tsp.
  • Salt
    to taste

Method

  • Melt the butter beforehand in a separate container. Combine it with sugar, milk, and cocoa powder in a medium saucepan over low heat. 

  • Whisk everything until smooth. Stirring from time to time, bring to a boil. After boiling, stop stirring and let it simmer for 1 minute. Remove from heat, then immediately add peanut butter and vanilla extract until combined. Add oats and salt. Stir. 

  • Let the mixture sit for 5 minutes. This will allow the oats to absorb some moisture. 
    Line the baking sheet with parchment paper or silicone mats for 5 minutes.

  • Place a tablespoon of dough on the lined baking sheets. Smooth slightly with the back of a spoon if desired. Repeat the same for the rest of the test. 
    Place the cookies in the refrigerator for 30-60 minutes to set. Get out of the fridge and enjoy! 

  • Cover and refrigerate leftover cookies for up to 1 week.

Tips

  • How to properly melt butter in a water bath? 
    You will need two dishes of different sizes. Pour water into a large container and put it on fire. Place a smaller container on top so that it is about half submerged in water. Put chopped butter in it. Under the influence of boiling water, it begins to melt. Stir it lightly to speed up the process. Once the butter pieces completely dissolve, remove from heat.
