Grind the oat flakes and pour into a bowl. Add the ground almonds and amaranth.
Now add the rest of the ingredients to the bowl. It is better to add the agave syrup, milk and spices gradually. Depending on how sweet or spicy, wet or dry you like the nut balls, you can modify the amount of ingredients.
Finally, knead everything well with your hands and form the balls of the same size and that’s it!
Just before serving, roll the nut balls in the coconut sugar. It gives the nut balls a delicious caramel note. They should be rolled in coconut sugar right before serving, otherwise the sugar will melt over time and the balls will become sticky.
You can substitute ground almonds for ground hazelnuts and agave syrup for rice syrup.
You can also use gluten free oatmeal for this recipe.
