First, preheat the oven to 350 F.
Using a stand mixer, combine dry ingredients in a bowl. They are: flour, sugar and salt.
In a separate bowl beat together vanilla and egg.
Whisk wet and dry ingredients until smooth. Form a ball of dough.
Place the dough on a floured surface and knead until smooth.
Form the dough into small balls. Press the balls down to match the shape of the round cookie and place them on a parchment-lined baking sheet.
Use your thumb to make a small indentation on each cookie. Fill the dent with jam, nuts, or chocolate. Optionally.
Bake at 350 F 12-15 minutes until light brown. Turn the biscuits halfway through the cooking time. Remove the biscuits from the oven and refrigerate. Store in container at room temperature.
