The fall and winter months, especially the holiday season in December, are fantastic times for making shortbread cookies without baking. Such a delicacy creates coziness and gives a wonderful mood. Cooking takes only 20 minutes and is effortless.

Ingredients

  • Vanillin
    4,1 tbsp.
  • Pure maple syrup
    0,5 cups
  • Brazil nuts
    1,4 cups
  • Grated carrot
    1,4 cups
  • Freshly squeezed lemon juice
    1 cups
  • Cinnamon
    1,9 tsp.
  • Zest of lemon
    1,9 tsp.

Method

  • To begin with, you need to soak the nuts overnight.

  • Combine all ingredients in a large bowl. Pass them through a meat grinder or grind in a blender until smooth.

  • Spread the resulting mass in a layer of about 6 mm on a dehydrator tray covered with parchment.

  • Dehydrate cookies at a temperature not exceeding 104 F for one day.

  • The next day, remove the parchment cookies and dehydrate another day at the same temperature. At this stage, you can cut or shape the cookie.

  • On the third day, check the cookies. If it is dry well, remove it from the pallet and place in a tightly resealable container.

  • Store for 1-2 months.

Tips

  • Why nuts are soaked overnight? 
     
    Like grains, nuts contain phytic acid, which is part of a defense mechanism against predators. Thanks to this acid, the nuts ripen to the desired state. However, the phytic acid in nuts makes them difficult to digest. This steeping process removes the acid, improves the absorption of the nuts and the absorption of vitamins and other nutrients. 
     
    Soak the nuts in hot water for easier peeling. The addition of salt neutralizes the enzymes. In addition, the water removes dust and harmful substances.
