Method

  • Preheat your oven to 356ºF. Bake the almonds in the oven until golden brown. Then let them cool and finely chop in a blender.

  • Put the butter and 2.30 oz. of powdered sugar in a bowl and beat with a hand mixer until the mixture is light and creamy. Then add the vanilla, a little salt, amaretto, ground almonds and mix. At the end, add the flour and knead a homogeneous dough.

  • Form the dough into a roll about 1.60 Inch in diameter. Now cover the roll with a food wrap and refrigerate for about 30 minutes.

  • Form the dough into small balls and put on a baking dish lined with a baking paper. Keep some distance between the balls. Then bake for about 9 minutes or until golden brown. Remove from the oven and let them cool for a couple of minutes.

  • Meanwhile, sift the remaining powdered sugar into a bowl. Now roll one by one the warm cookies in the sugar. Put them back on the baking sheet, let them cool for another 5 minutes, then roll the balls again in the powdered sugar.

Suggestion

  • If desired, you can add the orange or lime zest to the dough.

Bon Appetit!
