In a large bowl, rub the orange zest into the sugar with your fingers for flavor. Stir in almond butter, honey, ghee, cardamom, ginger, amaretto, and salt. Add almond flour and stir until smooth, then add oatmeal, baking soda and 1 cup almonds. Mix everything thoroughly.
Transfer the dough to the refrigerator for 30 minutes.
Preheat oven to 325 F. Line two baking sheets with parchment and pour the remaining 1 cup of almonds into a large bowl. Form the dough into 1-inch balls, then roll in the almonds. Transfer dough to prepared sheets, about 2 inches apart. Line each ball to ½ inch, brush with egg liquid and lightly sprinkle with sea salt.
Bake until edges turn golden, 12 - 15 minutes. Let cool completely before serving.
