If you love all things dates, you will love these easy vegan cookies! Almonds are such great baking ingredients. Not only is their flavor wonderful, but their versatility also gives them several points in their favor. And this recipe is a testament to that versatility.

  • Dates
    cups
  • Water
    4 tbsp.
  • Ground oats
    cups
  • Rolled oats
    3 tbsp.
  • Backing powder
    tsp.
  • Cinnamon
    tsp.
  • Cardamom
    tsp.
  • Coconut oil
    2 tbsp.
  • Almond butter
    2 tbsp.
  • Salt
    to taste

Method

  • 1 portion is for 4 persons.

  • Preheat your oven to 350*F.

  • Add the dates and water to a pan and cook over a low-medium heat, mashing the dates with the back of a wooden spoon. You should end up with a smooth, thick, but spreadable date paste. Leave to cool. 

  • Mix together all the crumble ingredients in a bowl, then press 1/2 the mixture into silicon cupcake/muffin molds. 

  • Spread the date mixture, then crumble the remaining oat mixture on top. Bake for 20-25 minutes, then leave to cool completely.
