Melt the butter and tahini over low heat, stirring constantly until the butter is completely dissolved, then take it off the heat and set it aside for 5 minutes.
Pour the melted butter and tahini into a large bowl and add the sugar, vanilla and eggs. Beat until the mixture is light, and the texture is smooth. Then add sifted flour, sesame seeds, bicarb and cinnamon with pinch of salt. Stir again.
Add chocolate in the dough, stir gently, cover and chill for 35 minutes.
Line a baking tray with baking paper. Preheat the oven to 370 F. Use a spoon to place the dough on the baking tray. Do not place them too close together, or they will stick together. You can sprinkle sesame seeds and remaining chocolate on top of the future cookies. Bake for 10 minutes until the edges of the cookies are browned.
