A raisin muffin is a simple dish that can be either a sweet dessert or as a breakfast. Such a cupcake can be served on a holiday or on everyday days.

  • Wheat flour
    4 tbsp.
  • Kefir
    4 tsp.
  • Chicken egg
    2 pcs.
  • Vanilla sugar
    1,2 tsp.
  • Sugar
    2 tsp.
  • Baking soda
    1,3333333333333 tsp.
  • Butter
    8 tsp.
  • Raisin
    8 tsp.
  • Salt
    to taste

Method

  • Cook kefir and eggs in advance so that they are at room temperature. Wheat flour must be of the highest grade. Be sure to soak the raisins for 15 minutes and rinse under running water. 

  • Mix flour with baking powder and sift into any container. Put butter on low heat. Remove until boiling. 

  • Beat eggs until smooth. Add vanilla and regular sugar to it. Beat everything with a whisk until smooth. Vanilla sugar can be substituted for vanilla. Then add kefir and mix everything.

  • Add melted butter, mix everything carefully.

  • Add flour sifted with baking powder and knead the dough until the lumps of flour disappear.

  • Add to raisin dough and lemon zest. Stir well. Place the dough into the baking tins. The main thing is not to fill out the form to the brim! The dough will rise while baking. Bake the muffins in a preheated oven to 350 F for 25 minutes. Check readiness with a wooden skewer. If the skewer comes out dry from the center of the cake, then the pastry is ready. Enjoy!
