Stay cool and refreshed this summer with a homemade fruit ice popsicle! These sweet and sour treats are made with natural ingredients and contain no artificial additives. In this recipe, we'll be using strawberries and kiwi, but you can get creative and use any type of fruit or berry you like - cherries, oranges, pineapples, and more. These refreshing popsicles are the perfect way to beat the summer heat.

Method

  • Add the sugar in a pot of water and heat until it is completely dissolved. Add the lemon juice. The amount of sugar and lemon juice needed will depend on the sweetness of the fruit, so adjust it to your preference. 

  • Peel the strawberries and blend them into a puree. Peel the kiwi, cut into pieces and also blend it into a puree. Mix half of the sugar syrup into the strawberry puree and the remaining syrup into the kiwi puree. 

  • Pour the strawberry puree into glasses or molds, filling them about halfway, and repeat with the kiwi puree in separate glasses or molds. Place the molds in the freezer for 1 hour, then insert sticks into the frozen mixture. Top off the glasses or molds with the remaining strawberry and kiwi puree and return them to the freezer for 2-3 hours to fully freeze.

Tips

  • Alternatively, you can create striped popsicles by filling the molds halfway with one fruit puree, inserting sticks, and then filling the rest of the way with the other puree.
