  • Ripe mango chunks (fresh or frozen)
    2 cups
  • Granulated sugar
    0,5 cup
  • Lime zest
    1 tsp.
  • Salt
    1 pinch
  • Water
    0,5 cup
  • Lime juice (about 2 limes)
    0,2 cup

Method

  • Combine 2 cups of mango chunks, 0.2 cup of lime juice, 0.5 cup of water, a tablespoon of lime zest, 0.5 cup of granulated sugar and a bit of salt in a blender. Mix until smooth. Now pour the mango mixture into a shallow dish and put it in the freezer for 1.5 hours or until the mixture is semi-frozen.

  • Scrape the mango mixture with a fork to break it up into small crystals. Return it to the freezer and repeat the process every half hour until the fruit mixture is frozen and has a sorbet-like texture. To serve, scoop the sorbet into bowls or glasses. If the sorbet is too hard to scoop, let it sit at room temperature for a few minutes to soften before serving.

Notes

  • Use ripe mangoes: Ripe mangoes will give the sorbet a sweeter, more flavorful taste. If your mangoes are not very ripe, you may need to add a little extra sugar to the recipe to give it the right balance of sweetness.
