In a saucepan, mix the cranberries and sugar together and cook over medium heat until the cranberries are softened and the sugar has completely melted.
In a separate saucepan, heat the heavy cream, chocolate chips and vanilla extract over low heat until the chocolate is melted and the mixture is smooth.
Stir the puréed cranberries into the melted chocolate mixture. Pour the mixture into 4 individual serving cups and let it chill in the refrigerator for at least 4 hours.
Serve chilled, garnished with fresh cranberries or a sprinkle of cocoa powder, if desired. Enjoy your chocolate cranberry mousse!
Use fresh cranberries. Fresh cranberries are tart and provide a nice contrast to the sweetness of the mousse.
Be careful with the heat. When melting the chocolate, be sure to heat it over low heat and stir constantly to avoid burning.
