Method

  • In a blender or food processor, purée the kiwis and lemon juice until smooth.

  • In a saucepan, heat the puréed kiwi mixture and sugar over medium heat until the sugar has dissolved. Remove the saucepan from the heat after 5 minutes and let it cool to room temperature.

  • In a large mixing bowl, beat the egg whites until stiff peaks form. Afterwards, in another separate dish, whip the heavy cream until it has a firm consistency.

  • Combine the cooled kiwi mixture into the whipped cream. Gently fold in the beaten egg whites. Pour the mixture into 4 individual serving dishes and let it chill in the fridge for 3 hours.

  • Serve chilled, garnished with fresh kiwi slices or a sprinkle of powdered sugar, if desired. Enjoy your kiwi mousse!
