In a large mixing bowl, add the cream cheese, lemon juice, and sugar. Whisk everything super well until the consistency looks nice and creamy. Refrigerate it for around 1 hour before proceeding further into the process of preparing the mousse.
In another medium bowl, place the frozen raspberries and gently squish them with a spoon. After doing so, you will be left with a more juicy consistency, which will give a distinct flavor to the mousse. Why is it better to squish them rather than mix them in a mixer? By doing so, the raspberries will retain some of their distinct form, and a bonus is the juice that will be squeezed out of them. When everything is done, mix the cream with the frozen raspberries.
In a cupcake-sized dish, pour the cream together with the frozen raspberries. Decorate the dessert with mint leaves or fresh raspberries. Serve the mousse and enjoy its delectable taste.
How to prepare the best raspberry mousse? Use heavy liquid whipping cream that you whip yourself. Due to its higher fat content, heavy cream can easily be made stiffer, giving the mousse additional volume and consistency.
