Bring the almond milk and 1 teaspoon of instant coffee to a simmer in a small saucepan. Remove it from the heat, put in the chocolate, and let it sit for a minute. Stir until the chocolate is melted and everything is perfectly blended. Add 2 tablespoons of water and mix until the texture is velvety.
In a separate bowl pour the chocolate mixture and then add the 15.5 fluid onces of vanilla yogurt, together with 1 teaspoon of vanilla extract. Blend everything using whisk. Mix until everything is thoroughly combined. Split the mixture among four glasses. Keep it in the refrigerator for at least 3 hours or, ideally, overnight.
Scoop the yogurt and spread it over the mousse, then sprinkle the dessert with 1 tablespoon of cocoa powder.
If the dessert lacks fruits, add 1 tablespoon of raspberries when blending the vanilla yogurt and chocolate mixture. The sweet and tart flavors of the raspberries will make the mousse more delicious.
