Mustardy cauliflower rarebit toasts

Cauliflower florets give these rarebit toasts great texture, and the mascarpone adds a delicious creamy note. Add mustard for a punch and put the toasts under the grill until browned and bubbling for a quick and easy treat.

Method

  • Trim the stalk off the cauliflower, break off the florets and chop them roughly. Cook in simmering water for 4 minutes and drain well.

  • Mix the mascarpone, cheddar and mustard to a stiff paste, and mix it with the cauliflower.

  • Toast the bread, pile on the cauliflower and grill until browned and bubbling. Serve with green salad if you like.
