Peel onions, rinse and finely cut. Slice the garlic in the same way.
Rinse sweet pepper, cut lengthwise with a sharp knife and remove the seeds.
Cut the tomatoes in any shape.
Rinse herbs, finely cut.
Pour in olive oil into a preheated pan. Add onion and garlic. Brown until tender. Then add the chopped sweet pepper, stirring constantly. Simmer for about 5 minutes.
Add the tomatoes, tomato paste and spices to the pan. Stir well. Simmer over low heat for 3-5 minutes. Finally, crack the eggs and drop into the pan. Brown until the whites set for about 10 minutes, close the lid for a while and then sprinkle with chopped parsley.
If you don’t have tomato paste, grate the fresh tomatoes.
