Pesto Avocado Toast with Fresh Tomatoes

Delicious and tender toast with healthy vegetables. Perfect for your breakfast. Very easy to make, only 15 minutes. Try it before work!


  • Basil
    2 cups
  • Garlic
    2 cloves
  • Lemon juice
    2 tbsp.
  • Yeast
    2 tbsp.
  • Salt
  • Olive oil
    2 tbsp.
  • Water
    2 tbsp.

  • Prepare blender. Whisk basil leaves, garlic, lemon juice, yeast and salt. You should get a thick paste. 

  • Add olive oil and water to make a sauce. 

  • Make toast in a toaster oven. Wash and peel the avocado. Cut the avocado in half and mash it. You should have a purée. Add the sauce to the avocado and stir. Wash and slice the cherry tomatoes. Spread the mashed avocado and sauce on toast, garnish with the tomatoes. 


  • How to choose the right avocado?
    A ripe avocado should be slightly soft and deep green. Choose avocados with no dents or dark spots. Overripe avocados are easy to identify; they are very soft and sometimes turn dark brown. If you buy an avocado that is too hard, let it stand in a dark, dry place for 3-5 days along with bananas or apples.
