Prepare blender. Whisk basil leaves, garlic, lemon juice, yeast and salt. You should get a thick paste.
Add olive oil and water to make a sauce.
Make toast in a toaster oven. Wash and peel the avocado. Cut the avocado in half and mash it. You should have a purée. Add the sauce to the avocado and stir. Wash and slice the cherry tomatoes. Spread the mashed avocado and sauce on toast, garnish with the tomatoes.
How to choose the right avocado?
A ripe avocado should be slightly soft and deep green. Choose avocados with no dents or dark spots. Overripe avocados are easy to identify; they are very soft and sometimes turn dark brown. If you buy an avocado that is too hard, let it stand in a dark, dry place for 3-5 days along with bananas or apples.
