  • Plain fat-free yogurt
    6 tbsp.
  • Vegetable oil
    12 tsp.
  • Chicken egg
    1 pcs.
  • Vanilla extract
    10 tsp.
  • Mashed ripe bananas
    12 tbsp.
  • Chopped walnuts
    12 tbsp.

Method

  • Preheat oven to 350 degrees Fahrenheit. Oil the muffin cups.

  • Mix water and chia seeds together in a small bowl; set aside until chia seed gel is thickened, about 10 minutes.

  • Combine flour, coconut sugar, baking soda, baking powder, and salt in a bowl. Whisk the chia, yogurt, butter, eggs, and vanilla extract in a separate bowl. Stir in flour mixture until dough is moist. Fold the bananas and walnuts into the batter. Fill muffin cups 2/3 full of batter.

  • Bake in a preheated oven for 22-25 minutes. Use a toothpick, just stick it in the center, if it's wet, let it cook further, if it's dry, then the baked goods are ready. Chill muffins for 5 minutes before transferring to a wire rack to cool completely. You can serve it with tea or coffee. Enjoy!
