  • Onion, chopped
    1 pcs.
  • Garlic, minced
    2 cloves
  • Fresh tomatoes, chopped
    3 lb.
  • Dried oregano
    1 tbsp.
  • Butter
    4 tbsp.
  • Cooked spaghetti
    8 fl. oz.
  • Fresh basil leaves, torn
    cups
  • Finely grated Parmesan, for serving
    to taste
  • Kosher salt and freshly ground black pepper
    to taste

Method

  • In a large skillet over medium heat, heat oil. Add onions and season with salt and pepper. Sauté until beginning to soften, then stir in garlic and cook until fragrant, about 1 minute. Add tomatoes and stir to combine. Continue to cook over medium heat to let the tomatoes start to break down.

  • Cook the pasta as shown on the package. When the mixture reaches a simmer, reduce heat slightly and stir in butter. Season again with salt and pepper, add oregano, and let simmer about 15 minutes more to allow the flavors to develop. Place in a skillet with tomatoes and stir.
